I think this recipe is correct, but I will recheck it with Hacer tonite, and make modifications if necessary. I used to make this a long time back, and tommorrow I plan to make it for a friend who is going to visit me for tea. It looks like a cake, but sugar syrup is poured over it.

Ingredients:
For the cake:
3 eggs,
1 cup sugar,
1 cup oil,
1 cup yoghurt,
1 1/3 cup semolina,
1 1/3 cup flour,
2 tsp baking powder
1/2 cup crushed walnuts (optional)

Sugar Syrup:
3 1/3 cup sugar,
4 1/2 cups water
half lemon juice

Dessicated coconut for garnish.

Mix all the ingredients of the cake and bake at 350 deg F till red-gold in color. Turn the oven off, and broil for about 2 mins, or just let it sit in for about 10 mins till the surface is red-brown.

To make the syrup, boil the sugar and water for about half an hour, or until it thickens. Add the lemon juice and again boil for more time, till syrupy consisitency is reached.

Cake and the sugar syrup should be warm. Pour the syrup over the cake and wait a few hours for it to get absorbed.

Cut into squares or diamond shape, and garnish with dessicated coconut. Enjoy!

In turkish, you call this recipe ‘Sosyete Mantisi’. I have no idea what this means, next time I meet Hacer, I will ask her to translate this name for me. Well, other friends make this too, they have their own variations. This is a great snack for afternoon tea or brunch.

Ingredients:
8-10 small boiled potatoes,
1 cup yoghurt,
1 clove garlic crushed,
2 – 3 tbsp mayonnaise,
3 tbsp oil, (veg or corn)
3 tbsp butter,
red pepper as per taste,
1 tsp mint powder,
1/2 tsp tomato paste,
salt as per taste.

Peel the boiled potatoes, add salt, mix and press them in a baking tray or any deep dish, to make a layer of about 1 1/2 inch. (This recipe does not require baking). Mix the yoghurt, crushed garlic, salt and mayo and pour over this potato layer.

In a small pan, heat the butter and oil together. When it is hot, add the tomato paste, red pepper and the mint to it. Then add about 2 tbsp of cold water. When it boils, (which happens very quickly), pour all over the yoghurt+ mayo layer in the tray.

Let it set for about half an hour. Cut into squares and serve.

Update: Hacer told me the meaning of ’sosyete’; it means high society/rich society :D

Neo (from mexico), Julie (from US), and all my non-Indian friends like this. They or sometimes even their husbands want them to learn this. So there you go! This is I think the simplest way to make this or for that matter any other vegetable indian style. This method was taught to me by Yasir’s badi mami from Kashmir. Badi mami (translated as ‘Big aunt’) loves to feed people, so incase you are trying to control your eating portions, do not sit next to her at the table. Dont say I didnt warn you :-D , if you over-ate.

Ingredients:
1 whole cauliflower (if you are trying this recipe, I suggest using half a cauliflower) :-) , break into florets or bite size pieces
2-3 potatoes (optional), cut into big chunks
2 medium onions, chopped
1 fresh tomato or tomato paste,
spice mix: 1 tsp chilli powder, 1 tsp garam masala, 2 tsp corriander (dhania powder), 1/2 tsp cumin (jeera) powder, 1 tsp turmeric (haldi),
oil for cooking(about 1/4 to 1/2 cup),
ginger garlic paste 1-2 tsp,
salt as per taste.

First fry the onions in the oil, till they are golden. Add the ginger and garlic paste, fry for a bit. Then add the spice mix, but be careful, they burn quickly. So keep about 1/4 cup water ready. As soon as the spices are fryed (for less than half a minute on medium flame) add the water. After the water boils, add the tomatoes or the paste. Then add the potatoes, and fry for sometime. After about 5 mins, add the cauliflower florets. Fry well. Do not cover at this point. You may add salt at this time. When you see oil seperating, then you may cover for sometime to let the cauliflower and potatoes cook fully.

Done! Eat this with chapatis or bread or rice and daal.

Note: This method can be used to make all sort of vegetables, and also egg curry. Just add more tomatoes or tomato sauce to make curry.

I would say this is like indian-chinese recipe to make this soup. Tehsin showed me how to make this, and she makes this perfect. I tried it, turns out great every time. Its very easy too to make this, looks like a complicated recipe to others.

Ingredients:
Chicken few pieces(3-4 leg pieces),
Oil about 2 spoons,
1/2 spoon whole cumin,
1 tsp garlic paste,
1-2 cups chopped vegetables (onion, carrot, bell pepper, green peas)
1 tbsp cornflour,
salt, pepper as per taste,
1 egg,
water about 5-6 cups.

Boil the chicken pieces in all the water, till fully cooked. Remove the chicken pieces and shred them. Discard the bones. Reserve the stock (the water in which the chicken was boiled). Now in the same pot, put the oil, when it is hot, add the cumin and when it splatters add the garlic. Saute for a bit, then add the chopped vegetables. Fry for sometime. Add the stock and some salt and black pepper powder. Bring to a boil. Make a paste of cornstarch and about 2 – 3 tbsp of water. Add it slowly, while stirring to the soup. Again, bring to a boil. Finally, add the beaten egg slowly to this, stir constantly. Done!

For the upcoming V-Day, you could make this soup as a starter, and then have steamed rice and sesame chicken and stir fry veggies as your next course. Let me know, how this meal turns out for you. :-)

food/hurma.jpgI dont have words to describe how addictive this dessert is! You just cant stop eating it! Ayse Gul, ofcourse from Turkey, makes this the best. But Ulfet, Hacer and my other turkish friends make it equally good. I have made it a lot of times, and every time, it gets better. I think you need practise and patience to get it right.
Ayse Gul is lovely, she smells wonderful all the time, she has a gorgeous daughter, she tends to be a little naughty at times.

Ingredients:
1 egg,
1 egg seperated, (use the yellow/yolk for basting or brushing the top)
1 turkish teacup yoghurt,
1 turkish teacup oil,
1 1/2 tspoon baking powder,
1 spoon vanilla powder/essence,
All purpose Flour (maida) as needed.

For syrup,
3 1/2 cups sugar,
3 1/2 cups warm water

Dessicated coconut or crushed nuts for garnish. (optional)

First mix the sugar and water to make the syrup. (Note: in this recipe, the syrup is not made by boiling the sugar and water). Keep aside.

Take a mixing bowl, add the egg and the egg white, the yoghurt, the oil, baking powder, vanilla. Mix well. Add handfuls of flour in this and mix gradually. Stop adding flour when the dough is not sticky anymore, that is the sides of the mixing bowl are clean. Beat it a number of times.

Pinch dough to make small balls of about 1 inch diameter (like a little marble). Roll them between the palms of ur hands, to get round smooth balls.

Arrange on a baking tray. I need 2 – 9X 13 inch trays. I prefer glass trays, because of even heating. Brush the top of these with egg yolk.

Bake this at 350 deg F, about 30 mins or more, until you get a golden red color. Broil for a min or two on High. Turn off the oven. Remove the trays from the oven, pour the syrup equally in the two trays. Immediately return the trays to the oven for about 3-5 mins.

And then pull out the tray, flip each of them, so the syrup is soaked evenly on both sides. Do this fast.
Return this back to the oven, for a few hours. I let it soak overnite. Flip them to the right position after they are soaked completely.

For garnishing, you can use dessicated coconut or crushed nuts like walnuts, or pistachios. Just sprinkle on them

Note: 1 turkish teacup = 100 ml, approx = 4 oz.

1/2 cup flour, in a flat bowl or deep dish
boneless chicken strips,
1 egg, in a seperate bowl
1 cup bread crumbs,
1/8 cup parmesan cheese,
1 tsp italian seasoning
salt,
pepper.

Dip the chicken strips in the flour first, then in the beaten egg, then finally in the parmesan cheese, breadcrumbs and seasoning mixture.

Arrange them on a baking tray and bake at 350 deg F for about 20-30 mins, or till golden color.

2-3 green onions chopped,
mint powder (dry),
salt,
olive oil,
lemon juice.

Peel the avocado skin, remove the pit, and mash the pulp. Add the remaining ingredients and mix. The salad is ready! Easy, huh! :)
