Twist on the regular Sevai


Huda is from Saudi Arabia, her youngest daughter Dina is a little cutie! She must be 5-6 yrs old now, but she had an attitude when she was 4, but she is sooo cute, so gets away with it! Huda taught me this, and ever since, this is the only thing I make for Eid. This is soooooo good, its almost heavenly!
Super easy, super delicious, try it.

Ingredients:
3 eggs,
1/2 cup oil,
1 cup coconut dessicated (not the flakes kind),
1 can cream (brand Nestle, or any other, its about 5 oz can ),
1 spoon baking powder,
1 cup sugar,
1 can condensed milk,
1 packet roasted sevai(vermicilli)

Garnish (optional):
dessicated coconut, or crushed almonds, or walnuts.

Method:
Mix all of the above ingredients in a big bowl(use only 1/2 can of condensed milk now), except the sevai. Then break the vermicilli in small pieces and add to the bowl, mix well.

Bake at 350 deg F. in a 9 X 13 inch baking tray, till its cooked (about 30-40 mins). Check the center with a tooth pick to see if it comes out clean. Then drizzle the remaining condensed milk on the top. Wait till it is soaked, and again garnish with dessicated coconut or crushed almonds, or walnuts.

Potato Stuffed Biscuits


This recipe was taught to me by Hacer, she is good at cooking, baking, knitting, you name it, she can probably do it!

Ingredients:
For Dough:
1 stick margarine (4 oz),
1/2 cup vegetable oil or canola oil(about 4-5 ounces),
1/2 cup yoghurt (same as above),
1 tsp baking powder,
flour as needed.

Filling:
potato boiled and mashed about 3 medium,
add about a handful or two of mozarella cheese,
salt as per taste

Topping:
1 egg white in a bowl,
bread crumbs in a flat plate

Mix all the ingredients of the dough except the flour, add the flour gradually until you get a soft dough, not very soft, or else the biscuits will melt to form cookies! Make about 25 little balls of the dough. Flatten each of the balls one at a time, add a little bit of the filling mix in the middle, hold all ends of the dough together, completely sealing off the inner filling (or while baking, cracks can form in the biscuit). Dip one of the surface of this in the egg white, then in the bread crumbs and arrange on the baking tray (i used glass, but Hacer uses metal tray, doesnt matter much)
Bake at 350 deg F. until the biscuits are golden brown. Eat for breakfast, as a snack or anytime! They are delicious!
