This recipe is for making sweet (mithi) chutney by Rudaba aunty. This is a short cut for making this kind of chutney. My mom used to soak the tamarinds, then squeeze out the tamarind juice and then use jaggery(gud) to make this chutney.
Ingredients:
1/2 bottle tamarind concentrate,
1 1/2 cup sugar (maybe more),
1/2 cup water,
1/2 tsp salt,
1/2 tsp chilli powder,
1/2 tsp corriander(dhania) powder,
1/2 tsp cumin(jeera) powder,
1/4 tsp black pepper powder,
1/4 tsp garam masala,
1/2 tsp black salt (kala namak)
Method:
Boil the tamarind conc, sugar, and water, stirring constantly. After boiling add all the spices and stir well. You can refrigerate the extra chutney for a long time. Use this chutney to make chaat, or on dahi puris or on dahi vadas.

Rudaba aunty….hmm….beautiful, talented, artistic, excellent cook….the list can go on and on. I know her since I was 11, now I am 28, and she still looks the same! She makes the best biryani, I will post that recipe up soon. This is also one of her recipes to make a basic ‘dhania ki chutney’. This chutney can be simply eaten as a spread on a slice of bread, or to make a big sandwich with lots of veggies, or with samosas, or simply eaten with your daily food(indian cuisine).
Ingredients:
1 bunch cilantro(dhania),
2-3 green hot peppers,
1 small tomato,
1-2 cloves garlic, (more if you like garlic-y taste)
salt as per taste
1 tsp cumin(jeera) seeds(or use powder, if your blender is not powerful)
Method:
Put all the above ingredients in a blender with a little water and blend into fine puree. Thats it! done.
(if you like, squeeze a little lemon juice on the top)
