This is a vitamin rich whole wheat flat bread, which according to me is a complete meal in itself! Served with any vegetable, plain yoghurt or just butter, its great!
Spinach is a green leafy vegetable, high in iron, calcium, vitamins A,C, and E and rich in anti-oxidants.
Ingredients:
1 bag (10 oz) Spinach “palak” (if you use baby spinach, no need to steam the leaves)
1/2 cup yoghurt,
garlic cloves, as many as you like
1/3 cup oil,
2-3 green hot peppers,
salt,
black pepper,
1 tsp garam masala,
red chilli powder
whole wheat flour, enough to make a soft dough
(water, if required)
In a blender or a food processor, put all the above ingredients, except flour and water. Pour the contents in a mixing bowl. Add some water, if you want more dough (About 1/2 cup). Then add the flour gradually, until you get a soft dough. Cover the dough and keep aside for some time.
Keep a griddle (“tava”) on the stove and let it heat on medium high. Pinch out little balls, and dip in some flour, and roll out flat bread with a rolling pin(“belan” in hindi). Transfer it on the pan. Wait till you see bubbles, flip it. Spread on this semi-cooked side some oil or margarine. Again wait till you see bubbles. Again flip. Spread oil/butter again. Flip again for the last time. Done!
Make the rest the same way, and serve hot with any vegetable, yoghurt, pickles, butter. Enjoy as breakfast or as part of a meal.
Note: If you use a blender, you will get a puree, and your bread will be green colored. Kids love it. If you dont want your bread green, then use a food processor. Using a food processor, add the spinach in the end.
