Red cabbage salad


I recently had this salad at Iman’s house. We had gone over to their place to sit by their fireplace in their new apartment. They have a new baby sister for Raghad and Omar, her name’s Rawand, but Iman calls her Rawando, and so do I. :)

Cabbage is high in calcium and fiber.

Ingredients:
1/2 red cabbage
lemon juice,
olive oil,
salt
In a mixing bowl, toss the cut red cabbage, lemon juice, olive oil and a little salt. Let is sit for 5-10 minutes before serving. Done!



Pudding biscuit layered cake


This is again another common dessert in Turkey. It is a very simple recipe. This is by Ulfet. We use the Ulker biscuits for this recipe, US equivalent is Graham crackers, and in India like Marie biscuits (they should be squarish or rectangles though)
Ingredients:

1 cup flour,
4 tbsp cocoa powder,
1 1/2 cup sugar,
1 tbsp margarine,
5 cups milk,
1 egg yolk,
2 pkt Ulker biscuits

In a big cooking pot, mix flour, sugar, cocoa. Then put the cold milk and put it on medium-high flame. Dont let it overboil and keep stirring constantly so it doesnt stick to the bottom of the pan.

When it starts to thicken, add the butter and mix it well. Switch of the flame and let it cool. Mix one egg yolk to this. The pudding is ready.
In a tray, put pudding to form one layer, arrange a layer of biscuits on top of the pudding. Again pour the pudding, again the biscuits layer. Continue until your biscuits are over. Finally on the top you should have pudding layer.

(there will be approx 2 layers of biscuits in a 9X13 inch tray, that means, three layers of pudding)

Done, let it chill in refrigerator. It takes time for it to set.  Cut it in little squares and serve.

If you like, you can sprinkle nuts or dessicated coconut on the top.
