What to do when there are 3 boiled potatoes, and half a bag of baby spinach? Make this recipe of aloo palak (potatoes spinach).
Ingredients:
3 boiled potatoes,
5-8 oz baby spinach leaves,
1 onion,
1 tsp cumin (jeera),
1 tsp mustard seeds (raai),
1 tsp garam masala,
1 tsp red chilli powder,
1 tsp corriander (Dhania) powder,
salt to taste
oil for cooking
Start with oil in a pan, heat. Add the mustard seeds, and wait till almost the popping sound stops, then add the cumin. Next add the onion and fry for sometime, till translucent and a little red brown in color. Add the dry ingredients, mix, fry a bit. Add a little water to prevent the spices from burning. Let it boil a bit. Then add the chopped potatoes. Mix well, and add the spinach.
Let it simmer for about 10 mins covered.
