We made chicken biryani last night using Bombay Biryani Masala of Shan. It is my favorite for making biryani.
I pretty much follow the recipe on the pack. And while making layers at the end of rice and the chicken masala, I add a couple more layers of yogurt mixed with some cinnamon powder and garam masala and another layer on top of that of fried onions.
What this does is that, you get moist clumps of fried onions in your every bite. Delicious!

Hi, Mallika,
I am not sure if you will get Shan Masalas in Mumbai. I think they are made in Pakistan, and mostly sold in US, UK etc and I saw them in Kashmir. I am sorry, I have no information on where to purchase them in Mumbai
Thanks for your question. Hey did you look at the recipe for making biryani, it is very very good and tastes almost like Bombay Biryani! It is made by my Rudaba aunty, and she is a professional at cooking!
Here is the link, http://www.lifensuch.com/excellent-chicken-biryani.htm
I understand it is way more lengthier than using Shan masalas, but it is soooooooooooo much better!
Well, thanks again for your comment.
Take care, stay well,
