Meat n veggies in tomato sauce

Again one of Ulfet’s recipes. This recipe takes a lot of patience. It has to be slow cooked, for a long time.

Ingredients:
Boneless meat, cut in cubes (lamb, goat, beef)
1-2 garlic cloves
1/2 green pepper chopped
1-2 onions, chopped
4 oz mushrooms chopped
1/2 eggplant chopped
1 can diced tomato
black pepper, red pepper, salt
Oil for cooking

First let the meet cook in a pan, (no oil) covered, till the meat is tender on medium heat. When done, put little oil and 1-2 garlic cloves, the green pepper and the onions. Fry till the onions are transparent. Add the chopped mushrooms, again cook for 5 mins, then add the eggplant. After a couple of minutes add the tomato. Cook about 20 mins, covered, till you see the oil floating on the top. Season with salt, red and black pepper.

Done! Eat with pilaf or bread.
