Vegetarian Breakfast/Brunch


Our friend from India is coming to visit us. He is vegetarian. So I asked my friend Ulfet and her mother in law for a bunch of vegetarian dishes. This one is good for brunch or lunch.

Ingredients:
1 green pepper,
2 potatoes cut like fries,
1/2 eggplant cut in big pieces,
1 zuchini chopped,
oil for frying

for the tomato sauce:
2-3 tomatoes chopped,
oil,
salt
garlic(optional)

for the yoghurt sauce:
yoghurt,
garlic 1 clove,
salt

First fry all the veggies, and then make layers in a deep dish.

To make the tomato sauce, in a little oil fry the tomatoes, then they are completely cooked (you could start with half a onion, if you like, fry sometime, and then add tomatoes). Add salt and garlic and done. Pour the tomato sauce over the vegetables. Yoghurt sauce is optional. But if you do make that, then skip the garlic in the tomato sauce.

To make the yoghurt sauce, grate the garlic and mix with salt in the yoghurt.

Serve hot or cold and while eating top with few spoons of yoghurt sauce.
